It is the most wonderful time of the year… it is also the busiest, for pubs, bars and restaurants. Now that the clocks have gone back an hour and the winter nights are drawing in, so are the customers, which is why your commercial kitchen must be in pristine condition for the upcoming festive period.

It is easy to lose focus when the restaurant is bustling and you are rushed off your feet, but hygiene must take precedence, throughout the premises and especially in the kitchen. Is your festive menu ready? 

Arguably, one of the biggest considerations for any foodservice business, at this time of year, is the festive menu. No doubt, customers will have already started enquiring about your festive menu, and local businesses will be scouting for a place to host their Christmas staff do. 

The festive season is the time for indulgence, opulence and variety, diners expect a high-quality menu with plenty of choice. Make sure you have a unique menu that outshines your nearby competitors and that you have a variety of food to suit all diets and tastebuds. It’s 2019 and customers will be expecting more than turkey, beef and nut roast. 

Are you stocked up? Or prepared to be?

Once your menu has been checked off, it is time to prepare your stock. Dissecting your menu, sifting out the ingredients you will need for your stock is essential to prepare for your order. An option would be to use a stock and inventory management system combined into your Point of Sale system. You can then organise ingredients and align them to the numerous suppliers in place. 

Are your rotas ready?

All the cogs could be in place, but if you don’t have enough staff to do the job, the whole machine will fail. Having your festive rotas already in place is essential so your staff know when they are working and can plan their social schedule around it. 

Having a prepared rota in place means you will have the right people, in the right place, at the right time. Effective scheduling shows that businesses have their staff members in mind, making them more productive.

When putting together the festive rotas, you need to consider peak and quieter times. Achieving the right balance of making sure you have enough staff in place to deliver a quality service, during peak periods, whilst also ensuring you don’t have too many staff on during quieter times. For precaution, it’s always handy to keep a backup staff member on standby in case you receive a rush of punters. 

Have you deep cleaned? 

If you have not already had your annual manual deep, deep clean, then now is the time. Daily manual cleaning is necessary but a manual deep clean is recommended at least once a year. 

It is suggested all foodservice businesses take part in an annual deep clean, because dirt and grime accumulate over long periods, and although most businesses have a daily cleaning system, this often just touches the surfaces seen by the naked eye. It’s important to deep clean those hard to reach places that could be missed during a daily cleaning routine, in time for Christmas.
